Carnivore's interior is a simple and elegant design with stripes of beige, patterned with mirrors on the walls and ceilings, expanding the small dining room all within the historical context of CHIJMES.
The style of eating, which comes from a Portuguese word that means barbecue, apparently has its origins among the wandering cowboys of Brazil, for whom dinner is often a grilled slab of meat which they eat by the fire under the stars.
You start with a buffet spread of appetisers that include Brazilian specialities like a stew of pork trotter, tail, ear and black beans, as well as chunky tapioca fries and fried shredded kailan. There are also salads of palm hearts and fresh greens to provide a light overture before the crescendo of meats arrive.
And once you are ready for the meat, they come fast and furious.
Carnivore has an easy system to signal to the waiters that you are ready for your meat. Each diner is given a round disc with one side in green and the other in red. Green means bring on the meat and red means you surrender.
Flip it to show the green side, and the passadors - waiters bearing a skewer of meat which he slices over your plate with a razor-sharp knife - will make a beeline for your table.
Each night, there are at least 15 different types of meat that include chicken, pork, fish and beef in various cuts. The meat is merely rubbed with rock salt before being grilled so that you get to taste its natural flavour.
And where parts of the edges are overly salty, you can temper that by sprinkling on a bit of tapioca flour, which is left on the table. It also helps to soak up the oil.
