Seafood Restaurants - surrounded by tropical waters, Singapore is assured of a plentiful supply of fresh fish and seafood. Succulent prawns, crayfish, lobster, crab, pomfret, ikan merah and tenggiri are featured in many local dishes. Next to Peranakan Cuisine, seafood-based cuisine is perhaps the closest there is to a homegrown culinary art. Asian spices combined with Chinese cooking methods make for delectable concoctions, like Chilli Crab or Black Pepper Crab, Steamed Prawns and Crispy Fried Sotong (baby squid).
Singaporeans adore seafood and will happily make the pilgrimage to the east coast to find the best seafood restaurants (although there are smaller numbers scattered in other parts of Singapore as well). Out there, away from the city noise, the bustle and the high-rise estates, the atmosphere is much more relaxed and whole families - from the youngest members to the very oldest - get together to enjoy great food.
Chilli Crab, sometimes said to be Singapore's national dish, are stir-fried in their shells with a thick sauce of garlic, sugar, soy sauce, tomato sauce, eggs and of course, lots of chilli. The result is a pile of bright-red crustaceans to be attached with a hammer and fingers, an utterly delicious experience which should be enjoyed with crusty bread to mop up the dripping sauce.
Devilishly Black Pepper Crab, which appeared on the scene later, are also spicy and some say even better. Whichever you choose, be prepared to dig in and get messy.
