Cheng Tng - this Cantonese dessert began as a savoury soup and evolved into the sweet dessert it is today. It contains six types of ingredients known as "lok mei" (in essence, six herbs) which, when combined, are meant to cool the body down. These six items - lotus seed, honey dates, dried longan or mata kuching, Chinese barley plus two types of tree bark - are cooked in water and brought to a boil before sugar is added. This dessert can be eaten hot or cold.
These days, it is difficult to find a dessert stall that serves the traditional Cheng Tng mainly because when it is cooked with the six ingredients, many people do not view it as a dessert. As a result, some ingredients have been substituted and these days, you are more likely to find lychee, sago balls, sea coconut, white fungus, winter melon and even jelly in your Cheng Tng.
