Chwee Kueh are steamed rice cakes topped with fried preserved radish. The main ingredients are the same as Chee Cheong Fun. But the mixture of rice flour and water is relatively more viscous in this case. The mixture is then poured into small saucers that have greater depth than normal ones. Then they are placed in the Chinese steamer for steaming. It is a popular Singapore breakfast dish.
Unfortunately, hawkers these days are buying these steamed rice cakes with preserved radish in bulk. Machine-made ones are hard and dry but handmade ones are more springy and moist.
So how do you determine a good Chwee Kueh? Well, there is a way to check. Shake the plate of Chwee Kueh and see if the the Chwee Kueh wobbles like jelly or not. If it does, you have a near to perfection plate of Chwee Kueh. In Singapore, Chwee Kueh is topped with diced preserved radish. A good topping is one where it is not too salty. If it does, it would spoil the eating experience quite badly.
Another factor that determines the taste of Chwee Kueh is the chilli sauce. Like Chee Cheong Fun the best tasting chilli sauce that goes perfectly with Chwee Kueh would be one where Hae Bee (small shrimps) are added and fried with it.
To be able to fully experience the wholesome taste of Chwee Kueh, eat it with the preserved radish and chilli together. It would be an eating experience that would not be forgotten for a long time.
