Curry Chicken Rice in Singapore is served with a serving of rice and a bowl of Curry Chicken. The Curry Chicken would have pieces of potato and some pieces of chicken inside. The curry is cooked first. Once the curry is ready, fresh pieces of chicken and cut potato are put in the gravy for cooking.

Curry is spicy gravy made up of mostly Indian spices. In Singapore, the curry is less viscous and spicier compare to Japanese Curry which is typically sweet instead of spicy.

A good Curry Chicken is one where the chicken is tender and has absorbed the Curry gravy very well. The pieces of chicken should be small so that the Curry flavor can reach the whole chicken piece well and thorough. The potato should be soft but not to the point where it is easily crushed.

A lot of Hawkers concentrate on making the Curry Chicken well but neglected another important aspect of Curry Chicken Rice. The other aspect is rice. The rice should be able to absorb the Curry gravy well.

To make this an unforgettable Singapore Cuisine, first remove the bones from the chicken piece. Pour some Curry gravy on the rice. Now eat the boneless chicken piece together with the rice. The spiciness is going tantalize your taste buds.
