Double Boiled Soup is sometimes simply known as herbal soup. This dish is normally consumed when a person thinks that his or her body needs to be balanced. According to Chinese belief, the "heatiness" within one's body has to be neutralised with a cooling influence and vice versa. One way to do this is with soup, boiled with the right kind of herbs to produce either a heaty or cooling effect as required.

A double boiled soup does not refer to a soup that has been boiled twice. The ingredients of the soup are placed in a fairly deep thick porcelain bowl and placed into a pot with the bowl half immersed in water. The pot is then covered completely and the soup is cooked over a slow fire for hours. This method of cooking allows the soup to be cooked by the boiling water as well as the steam that is produced and contained in the pot. The ingredients retain the moisture better and are more tender.
